Fast Cook, No Fuss: Lentil Soup with Vegetables

INGREDIENTS - MAKES 4

  • 1 tomato
  • 1 onion
  • 1/2 zucchini
  • 1/2 red capsicum
  • 1/2 carrot
  • 1/2 celery
  • a handful of green beans
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin
  • 1 cup red lentils
  • 1/4 cup olive oil
  • salt and pepper to taste

PREPARATION

1. Wash all veggies and chop very finely.
2. Wash the lentils thoroughly.
3. Add veggies and lentils to a pot and cover with water.
4. Bring to a boil, then simmer on medium to low heat until the lentils are soft.
